Spam Fried Rice - I Need Advice
Posted on 12/15/25 at 3:29 pm

Last night I diced a loaf of Spam and grilled it. Then I added rice, corn, peas, and soy sauce. It wasn't bad but tasted like it was missing something. Does anyone have suggestions for next time?

For a sauce:
1 tablespoon hot water
¼ teaspoon sugar
1 tablespoon light soy sauce (or to taste)
about a 1/2 teaspoon fish sauce
1 teaspoon dark soy sauce (can find in some supermarkets and all asian markets, its thicker and sweeter)
Mix that up and throw it over the rice and stir well
Towards the end, spread about a tablespoon worth of shaoxing wine or mirin on the perimeter of the wok. Light drizzle with sesame oil, mix and serve.
Just soy sauce is not sufficient to make it taste "authentic"
ETA: I also feel like eggs are essential to fried rice. If you have never used fish sauce- don't smell it, just trust that it will add a nice umami flavor in small doses

I prefer a dash or two of sweet soy over the sugar solution.
Also dark soy sauce is pretty much just a color additive, like kitchen bouquet with jambalaya

oyster sauce is your friend in fried rice...and a toasted sesame oil drizzle at the end

I like the flavor of ketjap manis vs dark soy. Sweet, savory, slightly smoky, with a molasses-like depth. Both will work tho.

When it's done cooking throw a teaspoon or two of toasted sesame oil in there and stir. You'll notice a big difference in flavor.

The absence of sesame oil jumped out at me right away. It's a game changer.
ETA: Don't cook with it. Add it at the end to enhance flavor. As previously mentioned, a hint of oyster sauce does wonders.

Shaoxing wine is the secret.

Kimchi. Trust me.
I don't eat fried rice without a heaping scoop of kimchi, but it's more of a side than an ingredient in the rice. I think OP is looking for that restaurant rice flavor that he's missing with soy sauce alone

Not the bottle I've got. It's a pretty strong flavor. Couldn't tell you the brand, it's written in Vietnamese

Best advice I can give is "Lose the SPAM".
But hey, if you like it, go for it. I hate the stuff and haven't eaten it since I was a little kid---------and that was a llllooooonnnnggg time ago.
