Eggs. Do you sear or burn the eggs?

I must make my own eggs for breakfast, unless I'm willing to accept them scorched.

Mrs. HB is of the mindset to cook things fast and move on. A low heat and eggs without burning completely escapes her. She likes them that way. I like them unscorched, white with warm but runny yolks.

Do others like them scorched with crispy edges? Like this:

or do you prefer them like this?

#2 as long as the whites are all the way cooked. Can’t stand runny whites.

I prefer them like you prefer them, but when I am trying to cook for my 3 impatient offspring, they come out looking like your wife prefers them.

I do not have that much control.

I just cook them and eat them.

If seared, yay.
If rare, yay.

But I do love a fried egg in my grits.

Depends how im eating them. On a burger I like #1, kinda crispy and a runny yolk. If im just having a fried egg on top of a bowl of grits I want them like #2.

I have to make my own eggs too. First off, use bacon grease to fry them in.

I like mine barely done, wife likes hers almost burned. Burnt eggs stink.

Drop eggs in warm skillet-not hot. Crank temp after.

Once any part of a scrambled eggs turns brown, the odor it lets off makes it inedible to me, and it goes in the trash. I like them a bit more done than French style eggs, but they're still far preferable.

That top egg is money, and exactly how I do mine...unless I'm eating grits. Grits get that second egg.

As I've gotten older, I've stopped being disappointed when the wife overcooks / crusts up the eggs. Now, I see it as variety.

You should try them with smoked beef tallow. DELICIOUS!

Admittedly, the second egg was always the preferred result I tried to achieve. Lately, I aim for the first egg. The butter fried egg whites edges taste great.

If I could pull off the first one consistently without overcooking the yolk, that's what I would prefer.

I believe in Anne Burrell's statement.."Brown Food Tastes Good"
EXCEPT EGGS!!
Especially scrambled eggs.
Fried eggs, maybe, as long as the yolk isn't overcooked.
