Why are food trucks always have such good food?

Smaller operation that more than likely depends on made to order, not precooked and reheated/finished. Much smaller batches that aren’t prepped hours before opening. And of course, the main ingredient, a little extra blood, sweat and tears from a small business owner.

Our kids elementary school sold pizzalettas as a fundraiser for years. They’re available at multiple restaurants around town every day of the week, but they aren’t as good as the ones we make. When people asked about it, we told them they were made with love and the blood, sweat and tears of Catholic parents. I’m telling you- it makes a difference.

They find a few good things they do right and stick with it.



Also I find food trucks to be hit or miss. Too many people who can't cook are out there trying to do their own trucks now, so the market has gotten a bit oversaturated. 10 years ago the percentage of good trucks was significantly higher.

Because food profits in general aren’t great. Restaurants make their profit in alcohol and drinks. Food trucks don’t have that so they have to charge enough for the food to make things work.

I toyed with the idea of a food truck once upon a time, and I decided that between this and the constant maintenance of a truck that seems to always have something wrong, that it wasn't worth trying to do even as a part time job.

Same, 20 yrs ago Mrs Perple went to culinary school. We looked at a couple awful trailers for sale, business plan, local ordinances, etc, etc. She stayed with her corporate job and we never looked back. It’s easy to say their prices are high but that’s a tough business model that only gets more crowded.

Sit in the heat and bugs like an a-hole while your beer sweats all over the piece of shite picnic table and then you have to go order another hot beer when the food finally comes. No thank you.
