That’s a pretty dumb argument, tbh.
Every assistant coach I ever had, at every level, is still referred to by me as “Coach.”
Go after his embellishment & pretending he was the head coach. That’ll stick with the Stolen Valor issues.
Nobody who has ever played a sport thinks calling him on calling himself “Coach” makes any sense.

Yeah, there’s a head coach and assistant coach. They are both coaches, but they have different roles.

Wasn't he more like volunteer? He had no coaching experience or knowledge of the sport and may have had some criminal record issues.

A lot of high school assistant coaches are primarily teachers and help with sports. Sometimes they get a stipend.
