With football season approaching fast, I’m looking to expand on the foods I normally cook for football parties/ tailgates. My go to’s are normally: wings, stuffed peppers, boudin dip, and smoked sausage.
I try to stick to finger foods so people can just graze.

Kebabs/sates. Take just about any meat you want, marinate it in whatever, stick it on a stick, season it with whatever, and grill.

I once attended a tailgate where the host had an ice chest full of Jay's bbq poboys and I took them down to Chinatown. One of the greatest days of my life.

Chop pickled jalapenos and diced onions in the batter and watch out! OR slice pepper jack cheese and wrap it around the smokie before battering.

We have other food on offer, but we’ve been deep frying pizza rolls for a couple of years and they’re awesome.

Homemade bagel bites:
Take tortillas and use a mason jar to hole them out. Put the tortillas in a muffin tin and put pizza sauce cheese and the mini pepperonis. Bake em. They are like crack

Cold chicken tenders served under chandeliers are pretty popular in the grove at Oxford. Must be accompanied by red cup rebel yell and coke.

Just joking folks. We all love the Rebels.

Not sure about the smoking table. But got some practice on the whole pig a few weeks ago…

I like to freeze links of boudin and cut into 1" thick coins, wrap in bacon and grill over charcoal. By the time the bacon is cooked the boudin is nice and hot. Drizzle the tops with Steen's Southern Made Syrup.

I've also passed them in an egg wash, battered and fried them then made a Tobasco Pepper Jelly/Tiger Sauce sauce for dipping.
