..and my family doesn't like the taste of venison in traditional Irish-type stew (with potatoes, carrots, onions), though they love beef stew. They do like venison sauce piquant, but I've already made that a couple times. Any other suggestions?

Birria, mole, Verde or burgundy style just for a few ideas. Something with a heavily spiced base to mask the game.

Mississippi pot roast recipe, just sub your venison stew meat in place of a beef chuck roast. I’ve had it many times and lots of people didn’t know it was deer.

If all else fail, make sausage with it. Add pork, some pork fat, whatever dry seasonings you like, maybe some green onion, garlic, peppers etc. and that should make the gamey flavor more mild.

Have you tried using some of the meat in a pot of chili? I've done that before and cut it up in small squares and also used ground beef with it to make the chili. Comes out great.

I knew this was the right place to ask. The curry and Mississippi pot roast ideas are no-brainers - I should have thought of those, and I'll definitely work some venison in to my next chili. I love the idea of a Venison Bourguignon as well - have any of y'all tried that?

Stroganoff
Shepard's pie
Cook in a crock pot then shred for tacos or sandwiches

You mentioned stew meat so I'm assuming it's already cut into chunks. If not, you could consider slicing roast or backstrap into cutlets and make a "veal" parmigiana.

We put venison chunks in our chili. But the ones I shoot and clean always taste great, no complaints from the kids even. I guess that could be regional and based on their diet.

I made something similar for a game dinner once. The attendees donated the meat and we prepared it. They swore I replaced their deer meat with beef.

I took that as a compliment.

See Sunday gravy thread from a few days ago. I wouldn’t suggest only using venison, but equal parts venison stew meat, beef (short ribs, maybe), and pork (country style ribs) would make a fine red gravy.

Get a simple grinder and grind it up mixing 50/50 w ground brisket. Cook it as any other ground meat. They will love it

Sub for beef in a beef and broccoli dish. There is a great sauce if you google. It’ll be one of the top 3 answers. Use fresh ginger and fresh garlic.
