Raw carrots as a snack. Big ones, Bugs style.

I’m going to say that radishes are underrated. Great addition to most salads, can be used as a garnish for seafood dishes, and go great with hummus.
I agree with you radishes and I don't use them often enough. If you've never roasted them, give them a try. They're sweet and delicious.
Also agree on turnips. Vegetable beef soup is not the same without some turnips. I use them in place of potatoes. Tastes like my grandmother's soup.

They are great in braised dishes like lamb shanks and oxtail too. Adds a nice spice.

Leeks.
There's a reason they are a staple in French, Greek and Italian cooking.
Fennel too.
Radish was a great choice though too.

Leeks. They're great roasted.
Such a yummy one. I've had a leek obsession for the past couple of years, and you're right.. you don't hear about them much outside of foodie pages. I did a caramelized leek twice baked potato recipe that was fantastic.
My answer would be cabbage. It is so versatile. Slaw, egg rolls, roasted cabbage, stuffed cabbage, kimchi, filler in soups and stews..

Turnips
Parsnips
Leeks
All good. Hard to say okra is underrated because I rate it quite highly.

Kabocha Squash. Growing in the garden since I can't find in the stores. Taste like a cross between a Sweet Potato and a Butternut squash.

Pomegranates when they are in season. I bought some raspberry oranges and they are very good!

Persimmon!
I love persimmons, but you have to make damn sure they are ripe and ready to eat or your mouth will draw up like a baby who gets a taste of lemon for the first time.

i dont think the simple pea gets enough love
sweet pea great on their own
peas are great with mash potato or shepherds pie
can be puree into great soups
pea protein can be isolated and makes great protein supplements for people who cant handle whey proteins.
give more love to peas.
