we’ve had this same discussion here over and over about BBQ places in BR. If you are going to do brisket you either have to run out, or do it poorly. Every single place has tried to stay open thru dinner service with brisket and it has t worked.
There’s nothing wrong with running out if everything else is good. Either start brisket service at dinner or run out before dinner but you can’t do both and run a successful business

Or use Gonzo's method and only cook what's ordered. But yeah I would think almost running out would be ideal so you can repurpose the remaining into other creative dishes...tacos, boudin, nachos, etc.
*disclaimer: it's my understanding that he doesn't take walk-ins. You have to order through their FB. Maybe ruger35 can correct me.

Gonzo’s does take walk in orders on Friday in addition to pre order. He only does so much pre order before shutting it down.

You are correct in he does take walk-ins. Quantities are based on pre-orders, but he always plans for additional walk-ins.

This sounds easy, but if you are just getting started and can’t reasonably predict demand or have enough pre-orders, which most new places have issues with, this is where the difficulty arises for inventory management.

Well sure. It's a slow-build process. Taking preorders will obviously help but I would imagine if you're going to open a bbq joint, you already have a core group of clientele that you've catered for or whatever that you can depend on. It's not easy and why I stick to catering.

For shops that have made it more than a couple years, BRQ has done a good job at pumping out what I would call “run of the mill boring brisket” and some decent chicken and pork (which isn’t the hard part). TJ ribs I can’t get behind at all. A couple other shops have put out good brisket, but consistency has been really hard for them for all the reasons above.

I got their pulled pork once and it was terrible

TBH, I think they just use a pressure cooker, but man, I could drink their BBQ sauce.
Also: I tried Unleaded BBQ a couple weeks ago and was unimpressed. Beans and greens didn’t hold a candle to Hannah Q.

Yall should really try Smoke Bayou. Their ribs and brisket are both top notch. Their smoked cabbage is great also.

Unleaded was alright by me. Food was good, not great, and having a playground is great for families. Enjoyed bringing my kids there and letting them romp while I got a few minutes to eat and have a beer in peace.
Pizza in BR is also largely just okay, so maybe they can do that better. Red Zep will be hard to compete against for atmosphere, and maybe tbe best pizza in br.
