It happened like most fusion does.
I like the garlic butter but not a fan of the spicy "Cane's sauce" it overpowers the taste of the crawfish which are already fighting for their life under the heavy seasoning.

There's a significant Vietnamese population in Houston. They own lots of restaurants, and people in Houston like crawfish, so.....
but Vietnamese are basically the cajuns of Southeast Asia anyway. The 2nd or 3rd generations are as baw as anyone.

Yeah. Houston has one of the biggest chinatowns in the US. At least area wise. And it’s not just Chinese of course. Some amazing food there. The viet style crawfish is not part of the amazing food imo.

Nope. I just looked at the app and the cheapest within 50 miles of New Orleans were $5.49, $5.99, and $5.99. Rouses is $6.19. The average at least $6.99.

$14 a pound for something you can find in most ditches in SE Louisiana, I’ve never understood the appeal for crawfish in Louisiana. It’s all about the boil, which is just a reason for family and friends to get together to drink and have fun. We can get together and boil potatoes for a fraction of the price and get the same result.

I am not stanning for this guy because he seems to have problems keeping restaurants open but there are a lot of businesses that rely on "seasons" to make their year. This is why you see some odd combinations of seasonal businesses under one roof like pool supplies and Christmas decorations.

Reading that timeline, seems like Nguyen is not a good businessman and I’d using the shortage as an excuse to close, instead of closing because he’s not good at running a business,

I’m not sure if all the South Louisiana posters realize just how many Cajuns and various other exiles are in SE Texas. And that goes back generations in places like Beaumont.

My momma’s side of the family farms about 15,000 acres, so I know this first hand. Nobody loves sucking on the government’s teet more than farmers.
