I grew up fishing and I've never heard such phrasing.
Thanks!
Thanks!

for the boat - it means give it more gas
for fishing - it means give the fish time to swallow the hook. fish will often pick up baits just to see what it is and feels like, then it decides to spit it out or finally inhale them, so let it eat means give them time to suck the bait in its mouth

it mean's I'm about to run full twist.
A few years ago a coworker who doesn't really say much invited me to go deer hunting in the marsh with him. He had a pro drive and he completely came alive when he'd run that thing. He was like kid with downs meeting John Cena. He was hollering "gotta let it eat" over and over again on the way back from hunting.

Put it on the dash. Spur this horse. Light this candle. Black the stack. Give it the sugar.
All nautical euphemisms for wide open throttle.

I always interpreted this more of opening up the throttle through rough water and letting the front of the boat plough through the waves instead of just wide open throttle in general.

Yeah, that’s definitely an expression. Heard it all my life.

Just boating (or any thing involving speed) "let it eat" is oft times used to suggest going from nearly no speed to as much speed as the thing will go as quickly as possible. It comes from the Latin "perussi opibus", loosely "eating resources" because "letting it eat" will not only eat up miles it will also eat up your wallet....
Now, if you have a big old gal on the boat and someone says "let it eat", well, the possibilities are endless...

To let it eat
Definition:
To continue to give throttle regardless of outcome and with complete disregard for damages incurred upon equipment or bodily injury.
“We about to run aground and kicking up oyster shells,! Fk it let it eat”
“ sounds like the clutch is slipping fk it let it eat”
“This grinder is almost smoked fk it let it eat”
It’s not so much about how fast one is going but more about a disregard for the out come of the attempt to just keep going.
