Art Cantrell hands down baddest dude on and off the field. Michael Brooks comes in second

Dude can’t be that scary or intimidating.
He sucker punched a frat daddy in the jaw and didn’t even knock him down.

That’s pretty intimidating to me… ??
Not what I objected to. The other players in OP’s list except may Mathieu were psychotic, dangerous even. Al kept his aggression on the field was my point.

When I was an undergraduate (80's) I saw a pretty co-ed in one of my classes, so I sat next to her. I sat next to her the next few classes and chatted her up. I then asked her out, and she tells me she has a boyfriend. I then went to the "are you exclusive?" route and she says he's the jealous type and that he was Greg Dubrock a roided out linebacker back in the day.
Weighing out arse versus breathing I switched seats!
So Dubrock is my vote!

Rusty Domingue at LB dominated Nebraska when they were No. 1 in the country. He and Blake Whitlatch.
Then Domangue stabbed the guy afterward, but he always had a reputation of being crazy.

Destruction personified: Quinn Johnson.

HM:
Chad Lavalais (fricking prison guard before playing at LSU)
Todd Kinchen (special teams assassin)
Michael Clayton (laying out DB's was legal, and his passion)
Brady James
Ed Orgeron (maybe not necessarily during the 2 weeks he played for LSU, but otherwise one of the craziest frickers around pre-sobriety, and title doesn't say "on-field")

Steve Rehage, and it isn’t close. The Tulane brawl in Tiger Stadium when he took his helmet off and swung it and crushed several Tulane players was insane. I thought they were going to arrest him for attempted murder.

Shawn Jordan went on to fight in UFC and Bellator.

Rehage cared little for himself or others. He was not the biggest on the field but he was the baddest. When he lived in Broussard Hall, no one and I mean no one fricked with him. His demeanor was calm, but when he uncorked the whip arse……it was over.

Recency bias bigtime.
Eric Hill, Rusty Domingue, Michael Brooks, all are more intimidating.
But Cantrelle is still the answer to this question, bar none.

It’s Art Cantrelle and there isn’t a close second.

My friend was one of the EBRPSO deputies called to The Keg that afternoon. He was the first deputy on site, when he walked in, Cantrell glanced over at him, cursed him, & kept playing....they paid off back then. Friend decided to wait for the other deputies to arrive & when there were 3 of them they took a couple of steps towards Cantrell. Cantrell didn't blink or say a word; he picked up the machine, swung it towards them & started walking slowly towards them. Friend :" all we saw was a pair of dead shark eyes". The Sargent told them to back off, went outside, & the last they saw of Cantrell was him walking the machine back to the wall. He never said a word beyond his initial curse words. On the field, as noted, lots of seriously tough players. Off the field, as noted, Cantrell was a psycho.
