Fancy but easy dinner for two?

Need the F&B’s expertise for Christmas dinner with the SO. Always done the whole Christmas Day with family but moved close to everyone, and instead of being there on a trip, we now have the luxury of blowing that madness and heading home midday.
I’m really excited about the idea of the two of us having a nice dinner at home, but I don’t have a clue what to cook! I’d say I’m a pretty solid chef, but I can’t say I’ve got a ton of fancy / formal recipes and definitely don’t have a ton of options for something that works well for two people. We also don’t wanna leave all that commotion and then spend hours slaving over some intense dinner.
My gut says something that can be braised and then roasted. I love anything short rib and thinking that could be really nice. Any other thoughts / ideas? TIA!

Beef Bourguignon and make it ahead of time. It tastes better later anyway. That way, you and your spouse can relax more after you return from the family gathering.

The above recipe is easy and good. I don't spend time removed the leaves from thyme. I just tie some sprigs together and throw it in. Remove it later.
You will have leftovers. Enjoy them or share them.
I like this over grits or mashed potatoes, both of which you can make pretty quickly the day you eat it. They also reheat. Have a nice salad as well. Look for Sassy's salad in the TD cookbook. It's a really good salad to serve with rich dishes. A good balance.
I don't do desserts, so you're on your own there! Buy a nice one if you need dessert or just have a good old bowl of good ice cream with some Pepperidge Farm Bordeaux cookies.

A quick, inexpensive, restaurant quality meal we enjoy is simply a pan fried rainbow trout filet, parmesan couscous, steamed asparagus, with a nice buerre blanc sauce which goes incredibly well with everything on the plate. A couple slices of lemon and you're in business.
Cooking for two, ingredients will be $20-25 and take 30 minutes to cook. Pair with a quality, budget bottle of white, and you're looking at <$50 all in. Your bill at a restaurant, for the same dishes and wine, would run you $115-140. Better yet, it's not a super heavy meal so you and the ole lady can enjoy other activities after dinner without feeling miserable.

I did Emeril's duck with root vegetables quite a few times, and folks love it. Very rich, with oil, of course, but delicious and hearty. Supplement with some green vegetables, and it's something.
Not super easy, though, but fun to make!

Do y’all like oysters? You can make a delicious oyster stew/soup in 30 minutes and it is almost effortless. Oysters, butter, a little white wine, heavy cream, and oyster liquor. It’s a great starter. Pair it with someone else’s entree suggestion. (I include onions and garlic in mine.)

Cooked this last weekend (oven not pressure cooker). It’s so good, I should definitely do it more often.
