A good shrimp and grits is probably the easiest “fancy” meal you can make. Start to finish it can be done in 45 minutes. Pair it with a salad, a good crusty bread with some olive oil a la Johnny Carinos and you will impress anyone.

Rustic and easy, but delicious. This very old Italian recipe goes well with a Mediterranean type salad, wine and maybe crusty bread. It's often paired with polenta, but I use cheese grits.

Store bought duck. Seared with a reduced black fig balsamic sauce, diced andouille sautéed in red onions with a good olive oil and spears! Super easy, fairly cheap and look great when plated. Not to mention DELICIOUS!

Got a wok?
To make "fancy Chinese" use filet mignon/duck/quail...bok choi/shallots/roasted garlic...jasmine rice, do a Benihana flame with a V.S.O.P (be careful, I put a serious melt on my microwave handle)... be creative in the kitchen chopping up vegetables, munching and crunching while downing a nice cabernet/shiraz/pinot.
Recipe? Cook what you like
