I'd like to get my wife 1-2 really nice knives for Christmas.

We have nice steak knives and a nice pearing knife, but outside that we have what came in a set for our wedding.

Any suggestions are appreciated.

How much are you willing to spend?

Every home chef should have a great chef's knife for sure.

Check out Middleton Made Knives. He was a featured story on CBS Sunday morning the Sunday before Thanksgiving

I would get her a nice Japanese designed knife like a Gyoto:

Chef Knives To Go

Something like this:

Kohetsu Aogami Super Gyuto 210mm

I would also recommend a bread knife. It's good for cutting lots of things, not just bread.

Something like this:

Victorinox

German steel if you cut a lot of hard items, such as cutting through tough ligaments/cartillage, tough vegetables, etc.

Japanese steel is typically sharper but more fragile.

Wusthof for German. I use Dahlstrong for Japanese, though there are better Japanese options out there if budget is unlimited.

I like Dexter Russell soft grip knives. Whatever you get, be sure to have good cutting boards/ mats and a sharpening steel.

Lots of good maker advice, but pause and consider traditions. Gifting a knife is seen as very risky and may sever a relationship. Never give a knife...always sell knives for a penny. Tape a penny to the knife and then take it as the purchase price.

This was the tradition in my West Tn childhood.

Wusthof Classic. Proven, reasonably affordable, and high-quality knives that will last forever if you take care of them. They sharpen easily. We’ve had ours for over 15 years and we use them daily. They still look and function as if they were purchased last week.

This is a good starting set that can be expanded as needed…

So you need a good chef knife and a trimming knife.

A bread knife is also a good option

Shun are nice. Some of the German brands can be too heavy in my opinion. If on a budget of any kind, look for Victorinox knives. I have some really expensive knives but use Victorinox on a daily basis.

Really like my Wusthof knives. Have a chef, santoku, pearing, and a 9" carving knife. They all hold an edge for a long time. Worth every penny.
