Easy, but good dinner recipes.

I love to cook and try to make amazing dishes. BUT, the reality is work/parenting life can be busy and sometimes you just need those easy good meals to get you through the week. Anything you can make ahead and freeze that does well will work here too (White chicken enchalidas, lasagna, etc)
I'm not looking for meals that are going to when awards here, especially not for presentation.
Here's a few of mine.
1. Andouille and roasted vegetables. Slice up the andouille, brown it in a skillet. Roast it over your favorite veggies lightly coated in oil and creole seasoning (cabbage, zucchini, squash, carrots, broccoli, bell peppers, etc)
2. Italian beef sandwiches. Throw a small roast in the crock pot with a jar of sliced pepperoncinis and a jar of roasted red peppers in the morning. When done in the evening, put that on some toasted hoagie rolls, etc with some provolone and bake til the cheese is melted.
Just looking for some new ideas.

Korean ground beef and rice bowls. While rice is cooking just brown some ground meat and throw some seasonings in (you can look up a recipe that works for you)
Could also sauteed some vegetables at the same time. I madea few work lunches in no time with one of the recipes I found

Roast Chicken thighs
7-8 Bone in thighs with skin on
Olive Oil
Salt
Pepper
Fresh Garlic (2 cloves)
Fresh Thyme
Butter
Preheat oven to 425
coat thighs with Olive Oil Season thighs with salt, pepper and Thyme
In a cast iron skillet put thighs skin side down for a 3 minutes and flip. Add 4 tablespoons butter and 2 cloves crushed garlic.
put in oven for 45 minutes. After 45 minutes cut oven off and leave in oven for addition 20-25 minutes. Skin will be sure crispy and butter will bond to bottom of the thighs.

Sicilian Skillet Chicken
Black Iron skillet, 1.5 cups of heavy cream, 1 cup rough chopped spinach, a few sun dried tomatoes, 1/2 cup of diced tomatoes, pounded and halved chicken breasts, and a decent bit of parmesan cheese.
Put all into the skillet, bake at 375 for 35 minutes and broil for another 5 minutes. Serve over pasta.
Can also sub shrimp for chicken and cut the cooking time down to 15 minutes.
You're welcome.

Few ideas that don't require a ton of effort for me...
- Grilled bone-in chicken thigh, steamed broccoli and brown rice
- Tomato soup and grilled chicken caesar salad
- Quesadillas w/ chicken or steak, cheese and low carb tortilla
- Pasta w/ hot italian sausage, red sauce and parmesan
- Ground turkey, kale and white bean chili in the Instant Pot (+ any other canned ingredients)
- Grilled bone-in chicken thigh, steamed broccoli and brown rice
- Tomato soup and grilled chicken caesar salad
- Quesadillas w/ chicken or steak, cheese and low carb tortilla
- Pasta w/ hot italian sausage, red sauce and parmesan
- Ground turkey, kale and white bean chili in the Instant Pot (+ any other canned ingredients)

Google “sheet pan and dinner recipes”. Therer are some really good ones out there. Most recent one I did was a lemon garlic chicken with rosemary and thyme that was delicious.

remove, saute a pile of onion, about 30 cloves whole garlic, herbs in the oil
return the thighs, add more olive oil if needed, add capers or tomato if you want. i sometimes throw in some artichoke hearts too

We found a recipe last week for a Korean ground beef and broccoli rice bowl. It was quick and easy, don't remember where it was but just Google "Korean ground beef broccoli"

Rice mixed with a bit of rice wine vinegar and toasted sesame seeds. Then sautéed shredded cabbage and steamed broccoli in the bowl. Place protein on top with a homemade Asian sauce or Trader Joe’s soyaki.
Easy and delicious
Usually baked chicken thighs, pork tenderloin, steak or salmon.

I do some similar stuff. Rice cooker going, can do it with ground beef and do like fajita style veggies and make a burrito bowl, air fry veggies and do asian style like you were saying. Air fry some chicken and then throw in a pan with a sauce and do something close to seasme chicken or something. Lots of different variantion of rice bowls that can be done that are pretty simple.

On lazy nights I like to do ground meat and potatoes. Something my mom grew up on and made for us kids.
It's exactly what it sounds like: browned, seasoned ground meat, potatoes tossed in oil, butter, cajun seasoning...all put in a huge pot.
Something the kids will eat without complaining and will fill them up + no skill involved whatsoever on my end.

cook a pound of ground turkey in a skillet. Make sure the square sears well on both sides before breaking it apart
add a tablespoon or two of water and two packs of your choice of taco seasoning
add one bag of frozen broccoli/carrot/cauliflower mixed veggies
turn the heat down and let simmer till the water and season mix thicken
serve with Sweet Baby Ray's sugar free bbq sauce VERY lightly drizzled over it.

get a big pot of boiling water and cook noodles from two boxes of mac and cheese and 4 bricks of the shrimp ramen
mix all the noodles, cheese from mac and cheese and seasoning pack from the raman
add one pack of cut up hot dogs
let it all heat up and melt together
serve

Salmon in a 350° for 12-15 minutes is about as easy and delicious as you can get.
Throw some asparagus on another pan and rack and you have an entire meal with very little prep and cleanup in a short time.

Just saw a tik tok on these and am really excited to try this out. They added the au jus gravy packet and I think even a ranch for some reason?

Jacques Pepin's chicken thighs and spinach is one of the quickest and easiest meals you can prepare at home. So good too.
My recommendation is to follow it exactly before you start playing around with it.
