Restaurant wait time question

So I go to Chimes East a couple of times a week as it is close to work. Every time I go not matter the time of day I’m told that it would be a minimum 30-45 minute wait while there are numerous tables available. Then without fail I’m seated within 5-10 minutes. Why do restaurants consistently do this at the risk of losing business due to the long wait especially during lunch hour? Happens at other restaurants as well

Serious question to restaurant OTers. Why do they do this?

The hostess doesn't get tipped and couldnt care less if you leave.

1. Probably short staffed so they only are able to use so many tables.
2. They tell you 30-45 wait in order to discourage you & make you leave as they are short staffed & are having a hard time keeping up.

The Chimes east is crazy successful, whatever they are doing is working.

I would prefer an accurate wait time but I it is always preferable to under promise than to over promise.

The employees don’t feel like dealing with the crowd and are hoping you leave. Chimes East is especially bad with this.

Age old strategy….under promise, while you over-deliver. Under what other circumstances could you be happy with a 25 minute wait time?

Went to some hippy place in Austin and they told us 20 to 25 minutes and it was over an hour. That was infinitely more annoying.

Always important to remember that open tables aren’t always available tables. In a normal situation at a normal restaurant that might be the case. However right now most businesses are short staffed in some capacity. Restaurants are worse in this regard. Kitchen staff are hard to find, especially experienced & dependable kitchen staff. Servers are in short supply & bussers are even shorter supply. I’ve noticed the incoming work force has a skewed since of what rate is worth their time. They also don’t want to work nights & weekends associated with hospitality. All these things are contributing to empty tables that aren’t available to seat. As for the time question, I’m not sure why you’d falsely quote a longer time unless you are poorly trained, don’t want the business or are just not very bright. It’s probably all

It's intentional. You want to under promise and over deliver.

If you tell everyone 15 - 20 minutes and it takes 30 - 45, people get antsy and salty. But if you tell them 30-45 and it only takes 5-10 people are happy. Basic human psychology.

The other piece to this is it allows the hostesses and front of house management help mitigate the crowd. What good is getting seated fast if your server already has 5 or 6 tables and can't get to you? Then you're sitting there salty as well. Gotta make sure you have enough coverage to handle the number of tables that are seated.

Same reason Delta moved all of their gates as far away from baggage claim as possible. People hate waiting. If they get to the airport 20 minutes earlier than scheduled, but have to wait 15 minutes for their bags - they're pissed. If they arrive on time and their bags are coming out when they arrive at baggage claim, they're happy.

If the hostess tells you 45 minutes, and it ends up only being 20 - you're tickled pink. If she tells you its going to be 10 minutes, and it ends up being 15, you're impatient and pissed.

TLDR: Because the general public are impatient and dumb.
