If your eight days include the day you arrive and the day you depart, you really only have six days for activities. Also, the day you travel between islands is also pretty much lost. My two cents would be Kauai and Big Island if you want to do two islands.
I'm headed west in a week and a half and doing five nights on Oahu, Kauai and Big Island.
