Go to La Matriciana. Been around since 1870 and it was my favorite restaurant in Rome. You won’t be disappointed.

my only suggestion for you is go see all the sites early in the morning , before 10 am and it is an entirely different experience (no people). We went to the Vatican at 8:30 am and it had <100 people in it, was amazing and peaceful.

Also end of day. Went to the sistene chapel while it was closing down for the day and there was like no one there and got to sit on the benches and got to just stare and sink it all in

I don't disagree at all just check the times that places open. Italians are like the french and a lot of stuff doesn't open early. But stay open late, that's nice to be able to get a Gelato at 9:30pm.
This isn't like a can't miss place OP, but the main Termini train station had the best collection of food " stands" in the city that I saw, like a really nice food court. They are built in, I want to say stalls but that's not fair. Sure it wasn't all local, most not really. But sometimes its nice to have a little variety on vacation and everything that I saw looked good. They also had good hours from what I've seen.

This may sound cheesy but the most fun I had in Rome was a small group Segway tour I booked on viator. Such a fun way to see the city right at dark. We all had a blast and it wasn’t very expensive.

We just walked around the little town and through the cathedral there. The town sits on top of a hill. You take a bus or tram to the top of the hill from the train. There is a great view once you get up there. We probably spent 3 hours in Ovierto maybe but it was a good change of pace from Rome.

I second Orvieto. We stopped there for a few hours on our way out of Rome into Tuscany. It is an ancient city, we went down St. Patrick's well- really cool, walked around the old town, visited the Duomo. We ate a great meal at a small restaurant run by a mom and daughter. We were the only ones in there and they took their time to sit and talk with us for a bit. It was during Mardi Gras and we passed through a group of about 30 kids and parents having some sort of Carnival celebration in the streets. They had masks on and were throwing confetti. It was neat to stumble upon that.

We had the same experience with a restaurant in Ovierto. It was one of the best meals we had on our trip to Italy and the owners and staff could not have been any nicer and appreciative that we were there.

Ovierto felt like one of the more authentic towns we went to, as in the most locals and fewest tourists. Most authentic “shopping” and restaurants of any of the 6-7 towns we went to. It just feels most normal as opposed to super touristy focused. It’s a good sized town to, you can easily kill a couple of hours. It’s right off the A10 and the train line so it’s one of the easiest.
I will say it was one of the least romantic though. It’s way high on a mountain top with the least “tuscan” views. Very good stop though, just trying to be honest.

I missed this part in your first post, but I would reverse the time spent in each place. 5 days in Rome might be a little much, unless you have day trips planned. You can do the Collosseum and Forum in a day, half a day at the Vatican, and then another day to walk around Rome. After that I would head to the coast and have more time to soak it in. Rome is not a relaxing city.
Now if you do day trips, that will help, but you would be doubling back each day wasting more time. Just my thoughts

I'm far from an expert. I'd suggest a new thread for this. But here's a hot take I'll probably get downvoted for....they aren't THAT different! Lol. I wouldn't stress if you miss one town and see 3-4 or whatever others, you didn't miss THAT much.
Our favorites were probably Pienza, its small and flat and quant. It felt the least super touristy along with Ovierto. But again, that could have been the day/ time we were there. Within easy sight of Pienza is the wheat field and house in the famous scene of Gladiator. The views were great there. DId I say it was flat? Sienna and Maltipuciano are great, they are just super touristy and super fricking hilly.
Staying at an aguriturismo is great. We were randomly on one with our Airbnb we rented and legit amazing having coffee in the morning as the sun rises and wine and apps at night as it sets with the views around.
We really enjoyed a nice long lunch out while exploring, and then wine and an easy dinner in while relaxing enjoying the views.
ETA: Here's another bit of hard truth you really don't hear anywhere. Tuscany and really Italy has very little to no mid class to upper middle class. Tuscany is a lot of poor farmers and small city folk, with very wealthy sprinkled in. Its amazing, but when you really get down to the nitty gritty and walk through the towns outside of the handful of streets of shops and tourist areas its fairly poor. Not dangerous by any means.

We stayed in Florence (across the river inside the wall) and enjoyed a day trip to Greve. Would recommend, but as stated, every little town is so beautiful and quaint that you’ll enjoy where you go and won’t really miss where you don’t. Can’t really lose when it comes to that.

We’re going May 2027… 4 nights in Rome + 7 days RoyalC cruise Italy to Greece and turkey. Never been, but looking forward to the trip. We’re staying at Pantheon hotel couple days before the cruise and Westin Excelsior couple days after the cruise. I used Marriott points for both hotel stays.

Day trips in Tuscany?
There are many.
Aside from Florence and Siena, the two main cities, Montalcino and Montepulciano are the two atmospheric hill towns specializing in great Tuscan wine, Brunello and Vino Nobile respectively.
San Gimignano is a quaint hill town with many of the ancient towers still in place.
Volterra is interesting.
Pisa and Lucca are on the western side.
We did the Cinque Terre as a day trip.
There have been several mentions of Greve on here. They have an incredible wine store just off the square. Il Falornori or something like that. It is like a luxurious wine bar where you can sample about 120 wines, mostly Chianti Classico. My favorite wine store in the world.
