How far in advance should you book flights to Europe or South Korea?

I am thinking of going somewhere different for a vacation and to give me some world travel experiences. How far out do you book your flights?
Not sure if I want to go to Europe or Asia, yet though.

It's more about the dates you pick if you're trying to save money, than about how far out you book. Use flexible dates on Google Flights to see where the sweet spots are. I've booked both less than a week in advance, and two months in advance, and it's the dates that make the difference.

If booking with miles, I’ll book 330 days out or whenever it opens. If paying cash, I’ll see alerts.

I can tell you from experience that too far out or too late you will pay a higher price.

Also, if you are flying to Seoul might as well fly through Tokyo and check it out for a couple of days. It is a short flight between the cities (2 hours or less I think)

It really depends on the time of year and destination OP. But generally 100-180 days or so is the sweet spot. There’s deals before that and there’s deals a little later. Unless you find a great price there’s rarely any reason to book too early.
I set flight trackers from multiple different airports to multiple different destinations just to find any possible deals. Sometimes there’s a random flight you didn’t know about that can be a great savings. Maybe a direct from Baton Rouge that isn’t available from Nola for example.

Far enough out to give you time come to your senses and cancel the plans while they’re still refundable.

For South Korea, start looking literally the day they become available like 10 months in advance. Especially if you are using points.
Hold it one way using the points (you'll have to do this daily) and then when your return becomes available do the same
Asia on points they have some good deals but its when they first become available then they go up quickly

If you're doing a rewards redemption, look across multiple airline websites in private mode. For instance, if you're SkyTeam (Delta), look at flights on the websites of Delta and Korean Air and KLM. It can be the exact same airplane (I know it doesn't make sense to book a KLM ticket from the US to Korea, but I didn't design the system) with different award availability.
Since I'm Star Alliance, I'll look at United, Asiana, and ANA to get to Korea, United, Lufthansa and Turkish to get to Europe.
And the Amex and Chase portals, if that's what you're redeeming.

I tend to book 6 months out but always direct w/ airline and always refundable. Exceptions on 100 % refunds do occur. Some airlines impose a cancellation fee even though it’s a refundable ticket.

I am confused on something with a couple flights I researched
It has me flying on Air Korea but mentions Delta as the primary carrier. So if I go directly to Delta will that flight be the same or is the search using best options?

It’s the same flight—just a codeshare with different flight numbers. You can book either way, but you’ll be on Korean Air.
Just watch your connections. Like if you’re flying from a regional airport into Atlanta and then catching Korean Air—if that long flight gets moved earlier, it can mess up your first leg.
