Found a decent package and just pulled the trigger to go to Athens over Thanksgiving… just for shits and giggles.
Any suggestions on things to do? Not do? Cool taverns? Don’t miss restaurants?

Not sure how long you're there, but consider a quick trip to Istanbul. A buddy is in Athens right now on a school trip and Istanbul is their next stop if they're not there already. You can get an eVisa on your phone while you're waiting to go groundside for cheap even after you arrive.
There are an absurd number of ferries in the Med if you want to explore beyond Athens.
Also, even if you don't book a tour, look at the list of tours available from Viator, it will lay out a lot of stuff to do.

I was in Athens in April as I went on a cruise that embarked there.
I climbed up to the top of Acropolis Hill to the Parthenon. That was awesome experience.
The Acropolis Museum ant the bottom of the hill is interesting and the nearby Plaka district is a historic and atmospheric neighborhood with shops, cafes and restaurants. The sights and aromas will guide you to a good restaurant. We didn’t have any dinners there because we ate on the cruise ship which docked there overnight.
My advice for a hotel is to stay in or near the Plaka District. Athens is a big city and there are many unattractive neighborhoods where you do not want to stay.
There are many cities in Europe that I could go back to over and over again and never get tired of. I have to say that Athens is not one of them. I have done everything I need to do there.
How long are you staying?
I would spend a day or two in Athens then head to one of the beautiful Greek islands.

We are going to be there next year at the end of a cruise recommended by others that have already posted in this thread. Planning to go to Delphi on the last cruise excursion, the do the Parthenon on our own. Last day we will play it by ear.
Since you are going first, would like any recommendations you have after.
Enjoy

We were thinking about Turkey next year but flared off after the Iran stuff started, not being sure how the Turks would welcome Americans.

I was in Istanbul in March of this year and am going back to Antalya in September. Never had a bad experience while there, except being badgered by the rug salesmen.
FYI, Istabul (and its airport) can be expensive.

Served with Turks in Afghanistan. The military was all about NATO and the USA. Not sure about the general population, but they were great, cooked amazing food and actually contributed unlike some NATO service members.
I feel like the Turkish nationals would welcome anyone.

I agree with everything geauxpurple said. The Acropolis and its museum are great. Plaka is beautiful and worth wandering through. We stayed in Monastiraki and enjoyed it—lively with a ton of great food. I wouldn’t recommend much outside of that in Athens.
A day trip to Delphi is great. Drive yourself if you can and go later in the afternoon. The tours mostly leave the site around 2pm, so you will have it almost all to yourself. Stop in Arachova on the way for lunch.
I’ve never done it, but I know other people that enjoyed the day trip to Mycenae.
Thanksgiving may be too cold for the beach, Lake Vouliagmeni, or coastal activities, but you can look at taking a ferry to an island like Hydra.

Taxi drivers will dump you near a train station, and say "traffic too bad, take train" just like always,
My 70+ year old white arse mother flies through Istanbul by herself multiple times a year based on wherever the hell she decides to go. It's fine.

I stumbled through there 17(good Lord) years ago.
Brettos was a cool little bar and I recall the James Joyce pub being a nice reprieve from Greek food after being there for 3 weeks.
Istanbul is cool AF by the way.

Do the Acropolis, the museum, the Agora, and walk around the Plaka district
That's about 2 days and really all you need with Athens. Spend the rest of your time on an island
