Amen brother. The key is flexibility. Do you absolutely, positively have to go to Paris the week of July 5-12th and want to fly biz class? Good luck.
Is there a great deal to say Stockholm the same week leaving out of Detroit? Take it.

Yep. It was Iberia. I’ll be using them to go to Italy next year.

Need to make a run to BP to fill up the wine fridge.

Let me know when. They’re open Tuesday to Saturday 9-12? They have Le Volte for $25.99 a bottle and 10% off for a case. It’s $32.98 at Total Wine.

You need to bite off the Houston to Narita flight.... 13+ hours. 1 1/2 hour connection then hop on that flight to Singapore 6 1/2 hours and arrive at 2am and a day later.
Water and books... lots and lots of water.

I don't really like drinking on flights. Mostly just watch movies and sleep rotate back and forth until you arrive.
Have a 12 hour flight coming up in a couple weeks should be fun

How did you learn how to do this?

How did I learn? That's a longer story, but if you'd like to learn, I'd start at:
https://www.reddit.com/r/churning/
Read the wiki, and then read what's under the Basic Reading section. Don't start trying to understand the regular posts until you've done those things first.
That's for earning the miles and/or points you need. Then you can use https://www.reddit.com/r/awardtravel to learn how to efficiently redeem them.
There are a number of websites that you can also use, but you should keep in mind that they are pushing certain credit cards on you because they get commissions for doing so. They might not always be showing you the best offers, because they are doing what's best for them. Nevertheless, you can learn an awful lot from reading about how they earn and redeem miles.
The biggest and most commercially successful website in this regard is The Points Guy, and that beginners guide will be useful.
Frequent Miler is a website I like, because while they do push credit cards, they are committed to always recommending the best offer, even if its not theirs, and they also recommend cards that they don't earn commissions on. You could read their Start Here page or this page to get some ideas.
Another website that I like is One Mile at a Time. It's very focused on premium travel.
There are so many other resources. Dan's Deals is a great site, though only partly about this hobby. Dan is an orthodox Jew from NYC and his site reflects that, but there's lots of good stuff there besides travel to Israel. The Award Travel 101 Facebook group has over 81,000 members, so you might want to join it. You could even go to an in-person conference like the Chicago Seminars or an event by Frequent Traveler University, though these conferences are still trying to re-establish themselves after the pandemic. Flyertalk has been around forever, though I would say that it's a tough place for a beginner to start, but I still go there for info that I can't get anywhere else. These days, I honestly get a lot of my info from a private Slack channel that I'm in, so I'm not browsing the web as much as I used to.

How do you guys do it? Booze? Ambien? Both?
That sounds like a trip east to europe which would mean I would likely get something departing in the afternoon and arriving early in the morning so when I do, here is my plan.
The day before I travel, no booze, no wine, no beer. Get a good nights sleep and wake up early and fresh for travel day.Board the plane, eat dinner then start to watch a movie. Once the sun is down I'll eat about 1/4 of an edible, drink a glass of wine and take 5mg of melatonin and try to get some sleep. I know I wont get 4 straight hours but if I can get an hour to an hour and a half 2-3 times over that flight, I'll be good when I land early that morning and be ready to go.
What I don't want to do is land and sleep...just ride it hard the first day and go to bed early and wake up on day 2 ready to roll.

It's not terribly difficult.
First you need to pick a points bucket to accumulate your points. I'm fortunate that I put a lot of the company's business spend on Amex.
Next you need to learn the airline alliances. Whose points work on what airlines and/or can be transferred to other airlines in the alliance. For example, British Airways Avios can be transferred to Iberia. If you're lucky Amex sometimes has a bonus transfer rate for your points. Again, about twice a year Amex transfers to British Airways and Iberia at 1:1.4.
When booking flights look for off-peak redemptions. That's where you get the most value. To do this, you must have flexibility in your travel days. Be willing to leave on a Thursday and come back on a Wednesday. Also, be looking at foreign carriers. The US carrier redemption rates pretty much suck for international travel.
Following the blogs of the points people also can help as already mentioned. Here's one that I plan to do some day.
Around the world in business class for 125000 American Express points

I just watch movies until I fall asleep, but mostly movies
Getting drunk on a plane sounds terrible - you're already dehydrated and having to navigate the seats and aisles for the bathroom seems annoying. One or two drinks for sleepy purposes probably okay but drink water.
People that need anxiolytics to fly just shouldn't. Deal with it like an adult.

So people who suffer from Anxiety just shouldn't travel internationally? Taking anti anxiety meds is needed for some people just to step on a plane. For others, it isn't needed BUT does help and is really none of your business.

And you can get a business class seat for less than you would expect. I've only done it with United, and it's been a few years so I only assume it still works this way, but many of the diamond members sell their allotment of upgrades on ebay. Google it, but you can book a standard economy seat (not basic economy), buy the upgrade on ebay for a few hundred dollars, contact the seller with your flight info and they go in and apply the upgrade to your ticket.
I've done it on multiple international flights.
I've never heard of this before in my life. I don't get it.

Practice.
1) Pick the appropriate time. I always take the red eye east and get as much sleep as I can and I take an early afternoon flight west so I can stay awake.
2) All wide bodies for international flights have entertainment. I watch a few movies, maybe read a book if I am feeling lucky. I always have a few games downloaded to pass time.
3) Drink plenty of water ahead of time, and I try to not get too boozed so I am no miserable or hungover the whole flight.

Have done many 12-16hr flights and it sucks, because I can rarely sleep more than a couple hours. Definitely booze, noise cancelling headphones and movies as mentioned.
Well yeah, but at least it's more enjoyable for a while.

I use to have an office in Bangalore. Would take the BA direct from MSY to LHR and then LHR to BLR. It was a 10.5 hour flight followed by an 11.5 hour flight. I would leave New Orleans at 9pm Friday and land at 5am Sunday. That was rough.

I had never heard of it before either until I did. Again, not sure if they still get them, but Premier 1k members received a certain number of international upgrades per year that they could apply to flights. Those that didn't use or need them listed them on Ebay. Once you buy it, you contact the seller with your flight info and they go into their account and apply the upgrade to your ticket number. Last time I did it was from Osaka to Houston in 2019.
