Watercress can carry liver flukes (such as Fasciola hepatica), which cause fascioliasis. You get infected by eating raw or undercooked freshwater plants contaminated with the parasite's larvae. Symptoms include fever, abdominal pain, and liver enlargement, and are treated with prescription antiparasitic medication.

So you either shite your arse out or have your liver eaten. Don't think for a minute they won't be shitting in the standing water to grow your watercress.
