Recently got back from grand isle, and caught a lot of flounder. How do you guys cook it? I just scaled them and cut head off like you would do a brim. I usually just filet and fry them but was wondering if there are better ways. I looked on google and saw recipes from non Cajun out of state people that didn’t require much seasoning. I know some of you coonasses have better recipes.

Pan sauté, or stuff with crabmeat and broil

Pan sear it and cover it with a crabmeat cream sauce with a little lemon and white wine.

I like to scale them and cut squares like in the picture and fry. You can use a fork to just pop each square off and enjoy.

If you've ever tried the broiled (not stiffed) flounder at Mary Mahoney's in Biloxi you would really know what you're aiming for.

The flounder looks delectable. The plate is awesome.

Grill it with some old bay seasoning, white wine, Worcestershire, olive oil, lemon juice, and minced garlic.

The fins too end up like potato chips.
