So I have seen this done a ton of ways. Eggs, mustard, dry. Premade flour mix, straight flour, straight cornmeal.

What is your favorite way to fry trout?

Zatarains seasoned fish fry
Trout filets in a bowl add mustard a little hot sauce, and a small amount of milk or egg is optional
Get your oil up to temp and you are good to go
Oh I also season the filets lightly with tony’s Before going in wash

I do this except I use the original zatarains and sprinkle with seasoning afterwards. The seasoned batter was salty as hell for me.

I've never have had speckled trout. If you had your choice between crappie and trout, which would you take?

I really like the Louisiana Cajun fish fry (Red Box). Pat the fish dry, toss in the fish fry, then into the oil. I find I don’t need to add anything additional with this fish fry.

Id probably give saca a small advantage but very small. But trout are wayyy more fun to catch IMO so it more than makes up for it.

Cool. I am planning a trip to hit some lakes in Mississippi and was pondering going a little further south to try catching something different. Have to look into it.

Filets in a cold bowl of ice water. Straight into whatever commercial fish fry mix you prefer. Whichever I use I always add some Tony's to it. No wash or any of that mess. Comes out fantastic.

The Louisiana red box of fish fry has changed the game. Mustard then run the fish through the red box batter. That’s it. It’s very spicy and super easy.

season with salt and pepper then dust with corn flour

makes a very light thin crust and all you taste is fish and not batter

save the batter fry for things that need flavor added to them like catfish or sheepshead

corn meal is way too gritty for my liking and i only use regular flour for oysters and onion rings

seasoned fish fry has way too much salt and its not always mixed well so from one bag to the next can be completely different amounts of salt in it
