For the first time Sunday. I was actually surprised how good it was if prepared correctly

Straight off the scales to the skillet. That’s why I only keep a few.

Yeah they say to keep them alive till cleaning. Knock them out and filet. Then to an ice water bath with a little salt. Then batter and fry

This statement fits for a ton of "junk" fish


Problem is there are a lot of people that mishandle the meat before/during the cleaning

You can also poach them a bit and freeze them.

We used to target choupic just for eating that's how much I love it.

I used choupique a few times cleaned and boiled in some seafood boil seasoning, then picked to make fish cakes and they came out great.

Nope, I didn't stutter. Choupique fish cakes. Made similar to codfish cakes. Expand your culinary knowledge.

Can't say I've ever tried hardheads. I do like a nice gafftop catfish though, along with blues, channel and flatheads.

Best way is to keep alive! hit in the head with a hammer!
put in ice water with a little viginer! fry with cornmeal and seasonings! black iron skillet outside! OMG i'm hungry!
