What’s the best bang for your buck yak for inshore fishing? Perception?
I think I can rig a new perception up with an anchor trolley, new seat, and an upgraded paddle for about $1000. What do y’all Think?

Will do. Had to do some re-rigging to the rudder, but did get a chance to stick it in a very small pond the kin folk have.
Very quick boat. Seemed to be pretty stable. This is the first yak I've owned that is a true fishing rig. First one I've been able to stand in. The real test will come when I get a chance to fish.
Will say this, the rod holders that are built in seem pretty shallow. But the cup holder fits a 12oz silver bullet just fine

One with pedals. The wind and current can turn on in an instant. At least get one with a rudder.

You can probably find a video of someone installing real rod holders in those spots. I think that has been a common complaint.

Wilderness Systems Commander 120 - $500 from SierraTradingPost.com
This is an absolute steal for a now discontinued kayak. It's a blank slate without a ton of bells and whistles, but this is a great boat. Stable, versatile and fairly lightweight at 64lbs.
Ocean Kayak Big Game Prowler II - $900 from STP too
Another helluva deal. This kayak is an absolute tank. Suuuuper stable and with a 600lb weight capacity. The accessory mounting plates allow for a ton of customization. Ocean Kayak is owned by Old Town and this kayak is a sister kayak to the Old Town Predator series. This is a heavier kayak than the WS Commander, but it comes rigged with more fishing specific amenities.

Yep. I am not sure how that will impact performance, but I got the Predator PDL to almost 6 mph yesterday with nothing in it. The PDL drive is a beast.
