Yes, I got a 2012/2013 (not sure) Hobie Outback. I just ordered a Jackson seat (for the cruise) from Pack and Paddle. I am trying to get it outfitted to take her out on her fishing trip with me.

I knew you were looking at the Outback, but didn't know you had bought it. Congrats.

The last time we spoke I mentioned wanting a PA but after thinking more about it I needed a kayak light enough to put on top of my Highlander. I just bought a small camper and wanted the ability to bring the kayak along while camping so the PA was out. It is pretty easy putting it on top of my vehicle. A few of the projects I will be doing to it is I need to make a rod holder (I plan on doing it out of PVC using the two back rod holders there), mounting the Jackson seat, making my own deck mat, and figuring out a way to transport my fishing rods safely inside of the kayak. I plan on using pool noodles.

Have any of y'all put in at Ramah on the east side of the levee?

I just got back from vacation in Florida and managed to get a fishing trip in while I was down there. I didn't want to mess with bringing and storing my kayak while we were down there, so I reached out to Nick Lytle with Navarre Kayak Fishing and set a trip up. We finished with 12 trout with the biggest being just shy of 22". I also missed what would have been my PB trout at the boat that probably would have gone 5+. If any of y'all are heading down to the Emerald Coast for a vacation and want to do some fishing, I would highly recommend giving him a call.
On a different note, he runs all of his trips out of Old Town Predator PDLs. I really enjoyed fishing out them. It's super stable, very maneuverable and surprisingly quick. It almost feels like you are inside of a small boat as opposed to a kayak. As much as I hate to say AlxTgr was right, the instant reverse on a pedal drive is a game changer. I also felt that it was significantly easier to peddle the PDL than the Mirage drive and I was a lot less fatigued after fishing all day in that boat.
I may be looking at selling my compass to get one. The main problem is the 117lb dry hull weight.

How far out from the beach were yall fishing?

We were fishing in the Santa Rosa Sound. The initial plan was to take the yaks offshore and try to find some mahi, kings and Spanish mackrel but the storm had the water really messed up.

That drive will struggle in the marsh. I prefer the short motion of the Mirage over the Pedal. The Pedal does have a better reverse.

Looking to buy 2 kayaks to store down at our camp in Cocodrie. Not concerned really with the price tag. Just looking for recs on yaks and where to buy in the NOLA/Metairie area. I have done some research on the Hobie Outback and the Jackson Coosa. Any suggestions?

If price is no option, then i'd go with pedal drive kayaks.
Massey's in NOLA will be the best dealer in that area, make sure you ask to go see the boat showroom upstairs when you get there.
If it were me, I'd look at Native/Hobie/Jackson pedal kayaks in that order. I'm a Native guy but you really can't go wrong with any of those three brands. The best advice anyone can give you is to demo before you buy. You can rent kayaks from Massey's...and they will subtract the cost of those rentals from your purchase once you decide to buy. They also have regularly scheduled demo days on Bayou St. John

I have an Outback. Good yak and a bunch on the used market.

Add Old Town Predator PDL and I'll agree.

Changed things up a bit yesterday and went on a freshwater afternoon trip to Henderson. Good times. A nice break from fighting current.

I wish I lived closer, but then again, I can hardly decide where to go as it is.

Last two trips were to Spring Bayou for the last gasp of the white perches. Won't fish much from here on out without a phone call. I do not instigate salt trips.
