Alligator is over rated imo, almost like chewing bubble gum with seasoning. Would marinade for a week to tenderize, balsamic vinegar or beer.

Have to agree. More of a novelty food to me.

I’ve always found that wild alligator can’t be frozen. Wild alligator tail fresh from the water to the grease is excellent.

Tenderloins are solid but what you buy is usually junk.

It’s fine if you just beat it with a meat tenderizer - so much that it gets too thin, just pound on it a bit and it is MUCH better.

This and the tail meat is good too! The rest is just to much of a fishy taste for me.

It’s the same with most game. The smaller, the better.

If you soak it in butter milk for several hours it’ll tenderize it a lot.

We shot two alligators in Florida during season this year. Have fried it several times. It’s delicious. Just flour and Everglades seasoning for me. Taste like chicken nuggets..

Jowl meat is the way to go, extremely tender. I use a mango habanero marinade and grilling

If it’s not cheek meat u must trim diligently. Then it’s just dust and fry. Pick you up some Dat Dipping sauce and go crazy.
