What's the longest you would leave some mallard breasts in the freezer and still eat them? I'm not a big duck hunter, but I traded some turkey hunts for duck hunts the year before last and still have some breasts in my freezer I found hidden the other day

I just don't shoot species I don't want to eat, even if it means I don't shoot at all.

Hard to beat seared breast in a taco topped with a pineapple jalepeno slaw and cilantro. I'll do something like that and throw the rest in a gravy or gumbo. I'm not a huge fan of only breasting them.

I've never really understood the hate for them. Ducks not great but if you marinate it and cook it medium rare or less its just like dark poultry meat.

The key is simply not to overcook it.

I doubt even homeless people would eat them. You think they're going to make duck bombs at the shelter?

That's the reason I quit duck hunting. It's a great time with friends, but I got tired of arguing who was going to take them home. And I knew if I didn't take them, they were just going to get tossed on the side of the road.

I love duck, for about 10 meals a year.

Roasted a few times, gumbo a few times and a few cookings of wraps so I basically need about 24 ducks a year.

I like to eat them, but I LOVE to hunt them. Back when i hunted 45 days/year, I cultivated people who would be glad to have them.

I still cleaned and ate a few, just couldn't eat all that I killed.

Back then I didn't know about making duck sausage either....

Duck taste like arse. Plain and simple.

Only way I eat duck is in smoked sausage with about 70% pork. Other than that, I might as well use that bloody arse meat for catfish bait.

Duck is delicious. When I lived in N La, I thought so too. But pot roasted duck is one of the best things to eat in this world.

Try this recipe. Duck breast trimmed. Try to cut as much sinew off as you can, the silver on the breast, no skin.
Marinate. What ever marinate you like. I use the Allegro game marinate.
Sauce pan with clarified butter or any kind of oil will work.
Mushrooms sliced, green onions chopped fine. Flour, chicken and beef stock. Sweet marsala wine. Rice or pasta.

Heat saucepan with butter/oil. Sautee mush/onions, roll sliced breast, not to thin, in flour. Place in pan Cook about a minute on each side. Pour wine about 4 oz, 2 oz each of stock. Cook down. If you want your meat rare, take breast out to your liking. I don't add garlic but you can. Pour over your rice/pasta. Enjoy.

This. I get all my duck eating in during the season and then will not think of eating another one till the following season. I will usually end up taking home ducks from our hunts about the same as you, 10 or so times. I never freeze them because if I do that, my lazy arse will never mess with them and they will just sit in the freezer. Plus, it forces me to actually do something with them so I cook them a bunch of different ways right after they sit in the fridge for a week or so. However, no matter how many different ways I prepare them, by the end of the season, I am at my limit on eating duck.

I learned early on what that hard bend in a spoonbill's wing looked like when they were mixed with teal and the sun was in my face (when I couldn't see the bill good).

I love to hunt them and love to eat them. Dont get to hunt as much as I used to. I'd take all the ducks someone would want to give away.
