I have to go to Lafayette on Tuesday for business, so I will be passing through there. I heard good things of Tramonte's sausage over the years. El Josey Wales killed a doe about six years ago for link sausage exclusively. Every time I pass by or hear "Tramonte's", I chuckle at his reaction when he went to pick up his $480 worth of sausage there.

The few times I've had mine processed, I wend to Armond's on OST in Slidell (previously on Gause in Slidell and was originally in Da Parish).
they are good, and the tamales are great.
I usually do my own processing.

Gotta agree with Day's in watson. Used to go to DDs, took two over to Day's this season would definitely recommend using them

Have it processed at Service Meats On Lee Rd. near Million Dollar Rd...Bruce knows what he is doing...(985) 893-7202

Bring it to Mama Maninnos Whitetail Butcher Shop in Independence. Good people, good turnaround, and great food.

DD definitely doesn't suck. I grew up in Bogalusa and always had my deer processed there when I was younger. That being said, their quality control has had issues in the past. I've never personally had a bad experience, but I know folks that have.

Ronnie's Boudin on Airport Rd in Hammond does a great job on deer sausage. I was skeptical until I tried some that my uncle had done there. I'll be taking mine there

I agree with Ronnies on airport. I like their smoked sausage but I get majority boudin made with my deer. They do a good job and are super fast. In fact I just got 100 lbs venison boudin made last week.

Bergerons green onion and jap is awesome. It's in port Allen on 415. I would be dropping it off on my way to laffy if I were you.

It's pretty awesome not gonna lie. I've had it made at 3 different places the last 5 years. Ronnies is by far the best.
I think his minimum boudin order requires 15 lbs Deboned deer meat. Should get you about 30 packs of boudin.

We all like to do business with "good people"

but honestly, if Bruce didn't make the finest smoked deer sausage I'd ever eaten, I wouldn't have recommended him...

I've tried a lot of smoked deer sausage others have had made from other processors and many different homemade varieties...there is just no comparison. JMHO

I'm sure we'll find out one day.

I'd like to get a bunch of OB together at H.I. one Wednesday...between CD and myself, we can bring a total of eight guests...we can all shoot skeet if early enough for $3 a box of shells and then move on to rifle and pistol(free)when that is all done.

Bergerons is up there with some of the best I have had. I ate Bergeron's next to Tramonte's and it was no comparison.

The Jalepeno Cheese, is good but the pepperjack was some of the best I've had. Their smoked sausage is very good too.
