My first chicken/sausage gumbo of the season since I took off work at 11.

Bud light for now. Will finish up with the brown.

Grits and Grillades. This is a test run for next Sat morning when I have to feed 50. Hope to have it dialed in by then.

Letting my 16 year old make pastalaya for the first time. So far so good.
Lemonade and mayhaw moonshine for me and the wife.

Alx. How goes it? Had slider burgers with bacon jam earlier. Sipping on some whiskey that I don’t care for waiting for the twins to fall asleep. I miss these threads.

At the camp drinking Bulleit and about to throw some ribeyes on. Got rained on in the stand this evening but saw deer, gonna be great rifle hunting weather tomorrow so I might just have a few drinks.

It's a traditional Cajun brunch dish. For the meat, you can use just about anything. Beef or pork or whatever. I prefer pork. For this one I did a Picnic shoulder.

I smoked the shoulder for about 3 hours. Then I did a Dutch oven of onions, bell pepper, and tomatoes. Took the shoulder off the smoker and put it in the Dutch oven for another 5 hours.

Then serve over Stone Ground Grits. Mop it up with a biscuit.

I've got a charity shoot for 50 people next Saturday morning. So I'm practicing with the recipe today to get it dialed in.

I've had it with fried medallions. The guys from lower LaFourche who rent some hunting land from us make it like a stew. But they sear the meat first.

Basically the reason I'm doing it this way is because I'm feeding 50 people at 10 am next Saturday. So I'm looking for a way to cook the meat more efficiently in bulk. Thus, the experiment last night and this morning.

And, I'm feeding rednecks, not coonasses. So I'm gonna make it however I want. And I'm gonna call it whatever I want.
