1. Fresh Cobia (within 3-4 hours of being caught)
2. Redfish (1/2 shell on grill with butter, garlic and lemon)
3. Speckled Trout (sautéed with lemon and butter)
4. Flounder (stuffed)

None of which have been frozen.

Was thinking the same thing. IMO tuna should be in a category of it's own. Red meat fish should not be compared to white meat.

That I have caught, in order, flounder, sacalait, speckled trout. That I have not caught, walleye, Atlantic cod.

Hogfish is amazing, I ate some in Islamorada. The harvest them commercially with spearguns.
1. Golden Tile Fish- I’ve only had it once when we caught one and it was surreal
2. Swordfish- it’s a completely different texture than anything fish I’ve seen but the firm meat is incredible
3. Tuna- it’s hard to beat fresh tuna
4. Wahoo- it’s right there with tuna
5. Yellowedge Grouper- only had it fresh once when we lucked up and caught one and it made some great tacos.

Snapper, Mahi Mahi, and trigger fish are all great as well.

Freshwater fish are a step down for me, but yellow cat belly meat, crappie, and walleye are all great fried.
