There’s been a crackdown on restaurants labeling species Royal Reds. Now, unless you have those, you have to name them Ruby Reds…most restaurants serve Ruby Reds now. Doesn’t stop anyone from eating them.

This is what I do with a majority of mine. Crab boil and cheesecloth. Either crumble and use like crab meat on steaks, use in a sauce or make "crab" cakes. It works great for all of them.

I worked at a seafood restaurant in the 90’s that called them bay snapper.

IMO they are as good as any fish, just hard to clean and the meat to size ratio sucks.

A while back the restaurant industry started using the name Mahi for dolphin (the fish, not the mammal) because people just didn't want to eat Flipper. I expect this is for similar reasons.

Sheepshead is one of the best-tasting fish to me but a lot of people can't get over the name or what they look like.

White table cloth restaurant I worked at called sheepshead every gulf fish known to man. It was the cheapest fish from the wholesaler.

Nary a complaint.

Same thing with Sea Bass. It's usually a Patagonia Toothfish, not a pretty fish. Also, called Chilean sea bass.

They will never be as easy as something like a trout, but cleaning them by fileting above the rib bones and leaving the ribs on the fish is really easy. It’s the only way I clean decent sized snapper, grouper, etc now also. Don’t cut through the ribs just work over them. Tons of videos online

I wouldn’t say its a common name, but I’ve heard it before. I think its mostly just restaurants that use the name because it sounds more appetizing than sheepshead. Plus yankees also refer to gaspergou as sheepshead, so the restaurants probably don’t want those people thinking they’re serving goo

Redfish used to be a trash fish also until the blackened redfish craze. Seeing all these captains starting to chase sheepshead mean some stricter regulations will come in play like they did with redfish

I agree with a few others, sheepshead is up there with the best out of the Gulf.

Ahh my people! I thought I was the only crazy one. I absolutely love sheepshead and will cook it 10 out of 10 times over red snapper. And I say that with red snapper being the fish I fish for most...taste and quality is identical, I just prefer the naturally smaller pieces of the bay snapper.

Guarantee most people could not tell apart a small red snapper from a bay snapper on the grill.

Yes, very common. I think the Landry's or Pappas' families started this. 3-4 decades ago.

Still one of my least favorite fish to eat, I will eat it day of or so on the shell, or fry it up with the trout, but once frozen I really dont care for it.

Its a violation for restaurants to offer sheepshead as bay snapper as it was determined it is not a snapper species and therefore a deceptive practice. In order to alleviate the unappetizing name of sheepshead it is allowed to be presented as a "rondeau sea bream" but I have yet to see or hear one restaurant use it.
