Would anyone like their chances of survival (not necessarily unscathed but alive) if you upgraded the knife to something longer like a katana or machete? What if you had a shield too?

I would pick the wolves.
Throw the bat at them and run for the nearest tree.
Use the knife on them as they try to lunge at me.
I’m dead either way but I at least feel like I’ll have enough time to repent my sins against the wolves.

Given that frontiersmen killed bears on the regular with less. I'd take the bear. Atleast make the bear option be two or three bears to even it up.

I do. What about jousting a bear. I have a lance, shield and a suit of armor. Bear has a lance and maybe some chain mail. If I have a dexterity of like 21, I should be fine.
