Would a more modern Amish style community be appealing going into to the digital/AI age?

Not horse and buggies and wide brimmed hats.
But maybe communities that are trapped in time with a peak of 80s/90s/00s technology?
In about 10 years when AI has taken over so much of our lives, will people be yearning to just go back to living like they are people again? Not enslaved to algorithms and information?

My parents still live like it's the 90s (no computer) and I have an uncle doing the same. Minus the smart phone, that's what we have in our house as well.

No, leave the Amish alone. I admire them for their perseverance in clinging to the traditions of their ancestors. Even their buggies are cool. Simple lifestyle - prayer, work, family, neighbor, community. An ordered life filled with purpose.
We could sure learn a lot from them.

I call it Neo-Amish.
Basically you'd limit tech to pre-millennium, maybe some rudimentary phone based internet for tech and communication.

Get completely off of social media and unplug from the 24 hour news cycle. That accomplishes about 90% of what you’re looking for.

You’re going to have people who are plugged in and everything is monitored. A digital police state.
Then you’re going to have communities where they’ve rejected it and are living like nothing happened. There will be small scale economies, people will be neighborly, and a general positive disposition will be had or you’ll risk being outcast. The flip side is these
Communities are going to be cut off from the progress of society. The communities will be okay with this.

I still use Facebook but only on mobile and use the "Friends" tab at the bottom, it gets rid of all the ragebait articles and bullshite. I don't even bother with the news anymore and i'll use Accuweather if I want to check the forecast.

We have almost no tech at the house. No cable (not available) and no streaming. No internet other than what is on a cell phone with standard cell tower reception. If we watch TV, it is on discs. We play a ton of music, but it is all on jump drives, vinyl or discs.
We are thinking of getting Starlink if we can sufficiently lock it down.
