I semi-understand people getting miffed about "no problem"

"Of course" seems pretty obliging to me, so not really sure what you'd have an issue with

About a month ago at lunch my dad bitched about this exact thing to me. Our cute little waitress said it every time too

In terms of etiquette, of course is considered more polite than you're welcome.

Of course - "absolutely, glad to do it"

No problem - "It didn't put me out that much" (according to people who complain about it)

It makes plenty of sense
