Professional painter’s don’t get much paint on themselves. Unless they are spraying.

Sheetrock and mud are white.
Most primer is white.
Most trim paint is white.
More paint is lighter than darker.
Add all this up and anything you get on your clothes blends in better with white.
I wear some old white or light grey when I paint around the house and when I get paint on my clothes it doesn't show up that much.
I painted in an old brown Firestone shirt once and I got a couple of white splotches on it. They stick out like a sore thumb. Looks terrible.

White is easier to clean. You can bleach them.

Why is aspirin white?

Several reasons.
1)White is by far the most common color of paint: trim and primer are usually a shade of white and houses used to be painted white more often than not. Also back in the day when painters were actually mixing paint, white was the base being used. A white uniform will still look "clean" at the end of the day if you get white paint on it.
2)White will show if you get paint on you more than other colors (besides black but no one wants to wear black when painting outside).A lot of the same reasons most chefs and doctors wear white as well. White was the official uniform of the painters union but they were already wearing white before then.

I always assumed it was because it was easy to see if you got paint on you, and that way you know not to sit on a couch or something. With a dark color, you might not realize as much and transfer paint.

Grandfather was a painter and wore white everyday.
Easier to clean (bleach)
