Do you want to be land locked ? There are several beautiful oxbow lakes and reservoirs mentioned here. They are all landlocked. If you want to be able to explore a lot of water and minimize boat traffic , there are only two choices

From a boat ride perspective , we have taken day trips from LV to New Iberia and Houma for lunch. Have also gone through the lock and south into the bays at the mouth of the Atchafalaya River to catch redfish in August. I plan to make a run this summer from the boat launch under the HWY 1 bridge in Port Allen, through the Sorrel lock and into Pierre Part Bay to the camp and back. It gets busy on the weekends, but there is enough water to find quiet place to fish, ski or ride.

Bruin is probably the best answer, but good luck with that. I bet places on Bruin are going for amounts higher than a giraffe's vagina, if you could find a place at all.
Honestly, for that mix of stuff, I would look at the Ouachita River, North of Moon Lake. There are camps up in Rocky Branch on the West Monroe side and probably some over on the Sterlington side too. North of Moon Lake gets pretty low key offering real good conditions to ski and that part of the river is beautiful.

Or if you value proximity to boudin shops Three Mile Lake in St. Landry Parish. Not sure about the fishing there.

If skiing is your thing, Lake St. John.
But it depends on where you live. There are tons of great lakes in LA.
Ours was at Indian Creek.
