I found this older guy after the 2016 flood. I paid him $50 an hour. He brought his own tools and I paid for materials. I was very impressed with how much he was able to do each day.

My guy brings his helper, and charges $500/day.
How much is that?

The neighborhood oddball that is handy but can't hold a steady gig can probably be had for $25/hr.
A real finish carpenter that uses his skills to earn a living is probably gonna be at least $50/hr. Likely closer to $60/hr.

This is tricky, but I'm going to say, $500/day.

Apples to oranges, but the lowest paid laborers at my company earn $25+/hr plus benefits, 40 hours guaranteed. Low voltage data technicians. Union job but barely. The company estimates its cost for a tech with benefits plus management and vehicle to be near $100/hr.
I'd imagine you could find someone who is retired or otherwise not actively engaged in the workforce to do basic carpentry for $40/hr cash. More if it's on the books (i.e., paid via check). Finish carpenters--good luck.

Any decent finish carpenter I ever used priced his bid on a per linear foot charge.

I look forward to your next thread: How much to pay ASE Master Tech / oil change tech?

Quality? You're not getting one by the hour unless it's a lengthy job.

2-3 days worth of items. Some hard. Some not. Don’t wanna do by-the-project because it’s a combo of different things.

Paying hourly will guarantee that you get into the situation of someone dragging their feet and taking their sweet arse time just so they can get a few more hours on your payroll.

None of them do this.

I'm $80 per hour.
With one helper it's $100.

What is that in metric?

Hourly is the best way. I'll estimate first, but not everything is cut and dried. Unknowns are real, so if I quote the job, I'm not going to lose.
I am going to quote worse case scenario. Go hourly and when I'm done and you're satisfied you actually pay only for the work performed.

Your looking for someone who is very skilled but a drug addict and unreliable. The guy your looking for owns his own business and makes much more than your willing to pay.
You’re looking for me and I charge by the job. I would not use a finish carpenter they are high dollar. A general handyman should suffice
A good one will tell you if the can’t do something instead of winging it.

I only hire people to do work that has been vetted on by family and friends. That way you know what you are getting
