Not sure our population density meets their model.
This is sort of what I thought, but it's not an issue of "density" as much as raw population numbers. I don't think NOLA metro meets their necessary criteria.

None. Put them in metry. NOLA doesn’t need chain restaurants.

At one point it was 2 million in the metro. This was 10 years ago. May have gone up

Said some gentrifier not originally from New Orleans. You know, the Bywater was once a working class neighborhood. Most real New Orleanians cannot afford to go to full-service white tablecloth restaurants for every meal.

I can't think of a single chain that isn't already in New Orleans that there isn't a better local version of.
New Orleans has great local hamburgers, fried chicken, sushi, burritos, sandwiches, gyros, etc. New Orleans even has a few decent BBQ joints. I don't see any market niche that's not currently well-served by local restaurants. The only thing that I can think of would be maybe a place like Jersey Mike's. New Orleans doesn't have a lot of places that serve a great Italian sub which isn't a Muffuletta for some reason.

Pollo Loco would do well with the growing Hispanic population in Louisiana.
Cafe Rio was a great white people mexican cafeteria style restaurant. Basically a non Tex-Mex Izzos. Not the best, but in 10 minutes you could get a decent wet burrito for $10. Great salsa bar, too.
