They are like tailgating inside while wearing a tux.

Depends on the ball. Went to Hermes ball at the Municipal Auditorium back in the late 70's. Went with a girl who was personal secretary to whichever Brennan ran things at that time. The ticket specified black tie, so I rented a tux, picked up Bev, and went to this hot event.
Like watching paint dry. No, worse. There was some bizarre Greek portmanteau played out on floor. Then debutantes were paraded around the floor. Then a society band played waltzes and the like while we watched from the balcony.
Yeah, watched.
Invitees are only there to watch.

Can anyone tell me what sorority formals or grubs are like? i will never get invited to one now. they sound better then balls. My life has been a waste.

A lot of the classy balls have basically two events back to back. First is the floor show, which is often like what you witnessed. This is a very formalistic ceremony where they basically hold court and introduce the single daughters of high society and crown the king and queen. This part would be just watching from the balcony. I went to one of these once just to see what it was like since my SO's cousin was one of the maids (i.e. high society girl).
Then afterwards, the ball is a big dance. Other than the father daughter dance for the maids, it was just a really fancy ball with jazz music, an open bar, and great food. I would put that ball in the classy/fun category.
On the flip side, the Orion Ball is cringe worthy. The parade ends at the ball which is in the river center. Basically, the Krewe members bring in ice chests of food and booze and leave it in the river center before the parade. During the parade, family members go into the River Center and set all the food out. So all the food is cold and has been sitting out for a while, and the alcohol is often at room temperature. The cover band is usually mediocre too. It's basically adult prom, and not in a good way.

Each Krewe is different. My parents were in one for many years. The ball itself is a formal event (but there are more and more "not formal" balls popping up). Usually, each member has a table and they get so many tickets to give to people they want to invite. The members are usually responsible for bringing the food and drinks for their table..
Things start off with a tableau, I assume each ball does it different. The one my parents were in, they would have a theme every year (they would start planning next year's ball the week after the ball). The beginning of the ball there are usually little kids doing something, they are all dressed to fit the theme. They announce the people who are the head of other branches within the krewe. There is someone who MCs the whole thing. That part might take about an hour. Then the spectators leave, the kids go home and then everyone, dressed in tuxedos and gowns, start drinking a lot and dancing (there is either a band or DJ or some sort of entertainment).
Sometimes, by the end of the night there is usually some type of drama that happens. Someone's girlfriend hooks up with someone else or someone thinks someone else wants their sig other which could lead to a fight breaking out... Or someone getting too drunk and their sig other gets pissed by the way they are acting so the couple has a knock down drag out.

One year, I went to one like you describe and it was AWFUL. My date was in the krewe so he was getting snockered the entire time while I sat in the audience with NOTHING. NO drink, not even water. There was the one dance and that was the extent of my participation. After all the pomp and circumstance was finally over (and, it lasted forever), everyone left to go to a breakfast in a private room at restaurant. I don't remember what restaurant. All the guys were plastered. All the women were sober as judges. The restaurant bar was packed. I was ordering two drinks at a time. They were all eating. Never again and the last time I went out with the guy.
I've been to others that have presentations first and then a good band, but they were still fun. We sat at tables and there were plenty of drinks flowing the entire time. Just depends on the krewe.

Haha same. I do know that before I black out, I have the best damn time. So much fun, and if you are from LSU or Nola you are guaranteed to run into some people you know.
ETA: Was at the Bacchus Ball last year and going again. I had the time of my life, even though the band sucked arse. Just make sure you go with a group of fun friends. If you are stuck at a table with people you don't know, you will likely not have as much fun.

Yeah, my first one about 20 years ago was like this. A distant relative of my wife's was on the court so we were guilted into going. Miserable experience. It was made worse because it was a Metairie krewe and was mostly old people.
It was about 5 years later until I went to another Mardi Gras ball/party/dance. All I have been fun. Even a high class one where I had to watch the crap from the side at New Orleans Country club was ok because they gave us drinks and fed us well after.
