I'm not from Louisiana, but from the outside, New Orleans is a world class food town that is not well positioned for Michelin love traditionally. Hence Commanders, perhaps emblematic of why people love NO food, not being starred.
Even the discussion ahead of the release was that CP didn't really deserve it in a Michelin sense other than as some honorarium of its place in NO lore.
I do expect a) there will be more New Orleans spots now star-seeking and b) the shift away from the Michelin type will mean more NO spots will get stars. But still, New Orleans is positioned to be a town with a million BG spots IMO. And that's not a slight unless all you care about is haute cuisine.

I think it's good food, but I think it is very hyped up. They seem to have nailed hitting that middle ground between old school/comfort food using younger/trendier approaches. So they're packed constantly because it appeals to all types.
Most items are incredibly rich, which is why I think it gets so much hype. They're like the poster boy for foods that would have won the old cooking competition on the Food and Drink Board. In fact, their menu items are what gave me inspiration many of the times I submitted dishes because I knew that food would appeal visually and ingredient richness wise.
They very much understand taking something old school/classic and elevating it with condiments (pepper jelly for example), rich sauces, and add-ons (like roasted red peppers, or caramelized onions). I was not aware of the total rebrand. Before that, it was a pimple on an elephants arse compared to Commander’s.

I went to Commanders a few weeks ago and didn't really love the meal. Not for the price. The Crack bread and the dessert was the best part.
August though had always blown me away and deserved a star. They meet all criteria but Besh dragged them down.
Peche is amazing too and I like to bring people there and split the whole red fish or snapper.
