Yes, 1/2 tsp per 3 pounds. 3 pound slab fits perfect in gallon zip lock. I added 3/4 cup distilled water, 6 tbls brown sugar, heaping 4 tsp of kosher salt, heaping 4 tsp black pepper. Smoked it until 150 degrees. It took almost 3 hours with my setup.

I let cure for 6 days, turning daily.

I am partial to my PK for the construction and heat retention, but kettles are very nice.

What temp did you set your smoker? Friday night will be my 7th day so I plan on smoking Saturday afternoon.

Trying to get away from using the sodium nitrate but there is so much confusing info out there on using it or not.

Want to make bet on that? My Genesis II Weber gas grill will hit 650 and do the same thing your egg will do in one tenth the time to heat up with no coals and I can use the smoke box for the char grilled taste.

I grilling terms it is versatile however it does a mediocre job at all it does. It does not retain heat, it can not get hot enough to sear meat like a broiler, due to not being able to retain heat it does not smoke to my standards plus it’s pizza attachment is down right horrible. But if you want the Cheesecake Factory Menu of grills have at it. I personally prefer to have specialized apparatus to do specific functions (ie. I have a Otto Wilde for broiling/searing, I have an Argentinian grill for general grilling, I have an Ooni for pizza oven and am still selecting a new smoker since my BGE was built into my outdoor kitchen when I sold my house....oh buy a good sous vide and a smoke gun while at it).

Sounds like you've got it all figured out, baw. Spend another 4-5k and you might be able to whip up something edible.

I agree. I have a gas pit also but I rarely use it. Matter of fact I used mine last night. It’s cooked many a meals on it. I’ve had it over 10 years

, he’s clearly talking about a Weber Kettle and he’s correct.

No one is arguing against the chops of a Kettle for the money, but it’s like saying the Corvette is the best supercar in the world - it’s awesome for the price, but better cars exist.

I’ve had the Masterbuilt Gravity 560 for a few months now. Took a little trial and error, but I’m really liking it now. Convenience of a gasser, flavor of charcoal. Can slow roll at 200 or crank it to 700 within about a minute. It’s my go to grill now. And yes, I’ve owned a Kettle and Genesis for about 20 years now. Like them too, but this Masterbuilt is suweeet!
