Apparently not. It would have been good practice to increase the offer until someone else volunteered. They would rather cause a scene and forcibly remove unwilling passengers from a plane that was already boarded.

Most companies settle "nuisance" suits they could win because of time resources and bad publicity involved. And this guy actually has a case.

I'm not delving into anything wise but SOP for airlines is to resolve over booking BEFORE boarding the plane

I think the airline has a technical arguement where the boarding wasn't "completed" yet. Of course, it wouldn't be in the best PR to actually make that argument too loudly.
So if it were simply overbooking, yes they could take him off the plane even after he got on the plane, but this was not due to overbooking.
