Basically it comes down to what boarding is considered. United's own policy is violated if the court would decide that being on a seat in the plane is boarded.

Not necessarily and at most only to a certain degree. Overbooking is only used on a certain percentage of flights, for example on busy flight times. Off peak times rarely have overbooking as they don't book up period. Low fares are more prevalent on under booked flights than those most likely to fill up.

the fact of the matter remains that the dude resisting is why he got hurt. I could never see myself resisting an officer, so I will never empathize with someone that does.
If this happened , you wouldn't have any empathy for that person, or if it happened to you, you'd just be like, "my bad, should have listened to the cop, that was totally my fault, not the cop's fault at all"???

What were the circumstances surrounding this flight? Like time of day, number of flights each day/the next day, etc. Every time I fly and it's pretty often people race up to the gate to try to volunteer. It seems strange they couldn't get anyone to volunteer on that little puddle midwest puddle jump of a flight.

From what I gathered it was last flight of the day and the next flight was the next afternoon.
