That's odd. I usually have the opposite problem.

Did you cover it in the refrigerator?
Regardless... try to get the moisture back by soaking it for an hour or so.

Is it fully thawed? If so carry on season and cook how you planned, if not put it an the biggest vessel of room temp water you can ASAP to fully thaw it out

Wash the sink, soak it in the sink for a while.

When you wet brine, this doesn't happen
Mine is looking nice with a dried out skin. Ready to cook

There's the problem. The skin dried out from not being covered====but you already know that-------now. That's now a lesson you learned and won't repeat. See how easy cooking is.
Like others have said, soak it in some water or even better, brine for a while before cooking it.
You could also rub the skin with some butter or olive oil and then apply your seasonings/rub and cook it like that.

Brine it. Put it in a tub with salt and water.

Put it in the microwave on low for 2 hours. Perfect turkey every time!

Gauch, why don't you tell them about coating in pepper jelly before adding seasoning

For future reference, if you’re gonna put a turkey in the fridge, rub oil all over it first. The out a couple paper towels or tin foil over it. Keeps the moisture in.
Meauxjeaux’s Method for Perfect Turkey- buy it frozen a few days early. Leave in package in the fridge. Night before frying/cooking, take it out of package, remove the innards stuff (which will still have a lot of ice in there), brine overnight in water/salt mix.
Will be perfectly ready in the morning.
