Correct, if I am not mistaken the nuisance trappers get to keep the meat and hide of the gators as payment for trapping it.

I guess all of the people who are dying to capture and transport an 11-foot gator without killing it were busy? Of all of the problems that Orleans has in handling issues, this isn't the one I'm going to criticize them for.
This is standard protocol for a gator that large. They are not relocated due to the number of threats they pose.

Why are some people confused that we have more gators than we know what to do with.. frickers are everywhere and when in populated areas upon reaching a certain size they are always euthanized

There are approximately 7.3 trillion alligators in Louisiana. They kill one of these big lizards, a few dozen people get mad about it, and it’s a story. A few dozen idiots are mad about everything. And it’s Always a story. But really it’s not a story.
