She...SHE should:
A) Have the coworker send her the texts
B) Speak with her manager about the situation
C) If that does not work, then she needs to go to HR about it
If nothing happens after that, and she's still being harassed, then she should file an EEOC complaint - but that's a last resort, nuclear option.
What type of work environment is this?
As for you...you need to do nothing. Anything you do makes it worse for her, and potentially you.

I would not go to HR. Could make things worse.
File it away, may have to use it down the road.

If they are attacking her as a person (how she acts, personality, etc) is it something she’s had issues with in the past? Also I saw the T-Rex comment, has that also been an issue as far as being made fun of for physical appearance in the past? It’s odd for grown adults to make fun of people b/c of physical appearance, especially men making fun of women. I work with all men though so I don’t really know

She started this job 6 weeks ago. She has never been called this historically to my knowledge. I don't even see the parallel honestly but it doesn't matter.

Everyone in an office talks shite about the new people, tell her to go to happy hour and get in a few drinks with new coworkers. Unless she’s just a miserable person it will work.

That’s weird, does she have any friends that work there yet? Damn, I would just make sure they don’t know it bothers her at first and see if they stop. Keep making friends, maybe those friends will turn on them. Difficult situation for a female in a new work environment. Assuming she is sweet and nice like you say, it honestly kind of even pisses me off hearing about it. Granted it’s text behind her back but still.

I am going to TRY to give some serious advice but it is the OT so it will be hard.
Do NOT go to HR that is the nuclear option and she will regret it. Nuclear is fine if someone is trying to Trump her vagina but not OK for this. She will be labeled Countess Von T-Rexenstein and it WILL follow her. Hospitals despite being larger are inbred and even if she switches hospitals there will be some connection to OLOL/Ochsner/Woman's or wherever she goes and it will catch up with her.
If it were me I would own it, walk up to the offenders like this:
Self-deprecating humor is almost always a great way to disarm something like this. Hell, wear a T-Rex hat in on a cold day. Yes it sucks but making friends from enemies in the workplace makes for a much better environment.
