My wife's parents didn't drink and didn't have a lot of money to begin with so my dad sprung for the booze but her parents paid for the rest

Bride's parents pay for the reception.
Of course, the bride's parents can decide they won't pay for alcohol for the reception, in which case another group, such as groom's parents, could step up and pay for it.

I've seen this happen. If the bride's family is religious, the groom's family may step in and cover that. I'd say that's probably the most flexible thing these days.

She did;t even want her parents or my mom and brother to be there when we got married. We're going to hurt some feelings in our little big town when we don't invite anyone to the wedding. We're thinking a little ducked off spot in New Orleans with just our immediate family and then a low-key reception the next night back in Lafayette.
And that's getting her to compromise because she wants less than bare bones.

Traditionally the brides, but I don't think its unusual for the groom's parents to agree to help pay for shite for the reception. Just go off and get married. Save yourself the headache.

They are on their own. The open bar, church, reception, flowers, food, photographer, cake person, dress, other shite and gifts are enough.
