Not going to pick.
So, seriously, every damn person/family from Louisiana who goes to Florida for a week or weekend at the beach does exactly what you are doing. Boxes/grocery bags full of food, and of course beer, wine and booze, because it's a LOT cheaper here in LA than in FLA. And if you're like me and have a bar in your house, of course you are going to take your half-filled bottles of rum, gin, vodka, tequila, etc. to finish off in addition to a bringing a new bottle or 2.
There is seriously no issue with it.
No 1., unless you put it up front in your passenger area and are taking swigs out of the bottle, it's definitely okay to bring your already opened bottles along with you, coming OR going (packed in the trunk, in the back section of an SUV (which has no trunk) or even packed in boxes or bags in the back seat if you have a small car. If the cops see beach toys, luggage, groceries, as well as a Louisiana license plate, it's pretty certain you are one of literally THOUSANDS of tourists coming and going on I-10. It'd have to be a really anal retentive cop to actually cite you for an opened bottle of liquor in such a scenario.
No. 2, carrying liquor for personal consumption across state lines (particularly in our area) is not illegal at all. Again, EVERYONE DOES THIS and you never hear of people getting busted for doing so.
Now on the other hand, you could be bad like me; our tradition is to stop at the little park on US 98 by the Navarre Bridge, surreptiously break out the booze and make our first cocktails of the vacation to have while driving the last leg on to Miramar Beach or Seaside.
Don't tell nobody, though.

If you get pulled over and ticketed for this, it should make the news. That reflects how much of a non-issue it is for the hundreds of thousands of trips a day made in this country with an previously-opened bottle of hooch in the car.

its really unenforceable unless they are sitting at a state line and stop you as you pass. While you are in the state you could have bought it within that state. You could in theory pour it out before you cross that state line. There is no ticket that can be given unless you tell them you are transporting it across.
